roasted red peppers and ham linguine

A while back, I mentioned that I had a bunch of cubed ham I needed to use and I happened to find this recipe at the same time I found this one.  My two kids and I loved this one, I literally kept going back and picking at the noodles until they were gone..yikes! but my hubby said it was good, just not his favorite.  I'm glad he is honest, but whoa, him and I have differing opinions when it comes to this dish ;)  So, I guess you either love it (like me!) or think it is so so.  If you make it, let me know what you think.  I am curious to see what you all think! Another reason I love this dish is because I usually have all the ingredients on hand (or at least I do now!) and I LOVE that it all goes in one pan on the stove.  Little clean up for me! 


roasted red peppers and ham linguine
8 ounces uncooked linguine
¼ cup chopped oil packed sun dried tomatoes
1 cup heavy whipping cream
½ cup fresh grated Parmesan cheese
1 cup cubed, fully cooked ham

Cook the linguine according to the package directions.  Meanwhile, in a large skillet coated with cooking spray, saute the tomatoes for 1 minute.  Reduce the heat; stir in the heavy whipping cream and Parmesan cheese.  Bring to a gentle boil over medium heat.  Simmer, uncovered for 5-7 minutes or until thickened.  Drain linguine; stir into sauce mixture.  Add ham and heat through.  Yield 4 servings.
