My husband loves strawberry pie. He is not particular when it comes to his pie. He usually tends to just ask for strawberries mixed with the store bought glaze in a store bought graham cracker crust. For his birthday, I usually oblige. BUT...for Valentine's Day, I wanted to make it extra special :). I saw this on YourHomebased mom, (where I also got my favorite spinach and artichoke dip recipe from) and knew this would be perfect for him...and I! It tasted as good as it looks. It was AH-MAZING!
The mousse layer has a few more steps to it, but completely worth it to me. Plus it needs time to chill, so you can make this up to a day ahead of time. And as you can see, it is beautiful. This would be perfect for any special occasion or when guests come to your house. My husband loved this pie and I think might request this now instead of his usual!

Ingredients
Pie Crust:
- 1 1/4 C graham cracker crumbs
- 4 Tbsp sugar
- 1/3 C butter, melted
Pie Filling:
- 1 8 oz. package cream cheese, softened
- 1/3 C brown sugar, firmly packed
- 1 tsp vanilla
- 1 C whipping cream, whipped
- 1/2 C semi sweet chocolate chips, melted
Topping:
- 2 C fresh strawberries, sliced
- 3 Tbsp. semi sweet chocolate chips, melted to drizzle on top
Instructions
Crust:
- Mix together graham cracker crumbs, sugar and melted butter.
- Press into bottom of 9 inch pie pan.
- Bake at 325 for 10 minutes.
- Cool completely
Filling:
1. Melt 1/2 C chocolate chips in microwave or double boiler. Allow to cool slightly
2. Beat cream cheese until light and fluffy. Add in sugar and vanilla, mix well.
3. Add in cooled chocolate.
- Fold in whipped whipping cream.
- Pour filling into crust and allow to chill for 6-8 hours or overnight.
Topping:
1. Reserving one strawberry, slice strawberries into slices lengthwise. Arrange onto of filling. Place reserved strawberry on top.
- Melt remaining 3 Tbsp. chocolate chips in a freezer zip loc bag. Clip off one corner and squeeze to drizzle chocolate over top of pie.
- Keep chilled until ready to serve.
- My baby and I (it is so convenient having a daughter old enough to take pictures for us now!)
